Awesome Chicken Recipe!

I made this recipe over the weekend. It is low in fat and you can't get enough of it.
I will call it Sweet, Hot, and spicy tempura chicken.

The best part about it is how simple and easy it was to make.

Step one.
Take your favorite chicken or anything like chicken and cut it in to cubes or strips (to a size that you like!).


Step two.
Marinate the cubes in eggs, corn starch, salt, and pepper and any other spice that you like for 30 minutes in a cool place.
Making the marinade:
You need about 1 egg per 1 1/2 lb of chicken and 1 Tbsp of corn starch and 1 Tbsp of water plus salt and pepper to taste. Mix the corn starch and cold water in a bowl then add the egg salt and pepper and any spice (you like to cook with). The amounts are not set in stone....

Step three.
Cover the chicken in corn starch; you can also use flour or even potato starch. Make sure the chicken gets a good coating. You can do this in a bowl or flat surface (I do this on the cutting board used to cut up the chicken or even the paper bag method where you put it all in a bag and mix it up well).

Step four.
Cooking the chicken can be done via deep frying, sautéing or how I did it via baking in the oven. It’s quite simple and fast. All you need is a baking sheet or anything flat that will hold them. Then you spray (with something like Pam) the bottom very well and once the chicken is on it, spray the top of the chicken as well. Place the chicken in the oven at 350 F for between 25 and 35 minutes depending on your oven.

Step five.

While the chicken is cooking take a skillet, place it on the fire on a low heat and add: honey, hot sauce, barbeque sauce, and any other spices you like I added to this fresh minced garlic. For 1.5 lbs. of chicken, use ½ cup of bbq sauce, 1 T of hot sauce, and 3 T honey, plus 2 tsp. crushed red pepper flakes. Add spices to taste.

Step six.

Add chicken to sauce and serve hot. For added kick, add sliced chilies or hot peppers.

I made the chicken recipe tonight and it was great! The only problem was that there was not enough to go around. Keep those recipes coming! Any ideas for Thanksgiving fare? I need some good turkey recipes.
